Happy Birthday America! We’re finally in the game after a weekend of chores, errands, and boon-doggling. It’s not over yet. We have the pleasure of working on two final exams this afternoon while we tend the fire. Tend the fire? Well yea, the title of this post is “In the Game.” You don’t think we would make it through the weekend without a fire do ya?
Got wood? We do. Or we could ask “is that two sticks of wild cherry wood in your pocket, or are you just happy to see me?” Both.
The old girl cleaned up nicely and she got broken in last night with her first fire to bake in the paint, etc. She’s hovering right at the perfect temp.
Three racks of ribs and ten leg quarters are in the smoke! We’re supposed to have at least one more adult at the house tonight to eat. If not the folks at the office will love me long time.
Notes on the chicken: Marinated overnight in buttermilk with black pepper, a little salt, ground chipotle pepper, and onion.
Notes on the ribs: Two gentle rubs are being used. One is a Big Bob Gibson’s brand rub purchased at the local BBQ store (got the wood there as well). The second a recipe out of Smoke and Spice; turbinado sugar, dry mustard, salt, thyme, onion powder, garlic powder, black pepper, and cinnamon.
